Easy Gluten Free Pancakes. Healthy, three ingredient, banana pancakes that your kids will love!

Bananas and pancakes are basically my kids favorite foods.

Put them together and we have a meal that is a winner every time!

Not only do my kids like these banana pancakes, but I like them too, because they are sooooooo easy. And making them doesn’t even require getting my mixing bowls out! Just whip out your Vitamix –here’s my Amazon affiliate link if you want to check out the style I use and ADORE: VITAMIX LINKor blender of choice. Dump all of the ingredients in, blend, and pour directly from the blender onto the griddle!

If you are avoiding gluten, these are perfect as long as you stick with gluten free oats.

I highly recommend using a little coconut oil in the pan you cook it in. Sometimes I use grassfed butter. So good!

Now, let’s discuss toppings.

You can go standard, with good ol’ maple syrup and butter-but don’t use the fake stuff…it’s just NOT worth it!- Or, coconut oil and raw honey is a pretty sweet combo. You could get really wild with pb&j –my personal favorite- or cook up a delicious blueberry syrup. Whatever you decide, you just really can’t go wrong!

3 Ingredient Banana Pancake Recipe

Serves: 1 serving
Ingredients
  • Ingredients
  • • 1 ripe banana
  • • 1 egg
  • • 1/4 cup rolled oats
  • • 1 tsp coconut oil
Instructions
  1. Heat a small pan over medium heat with the coconut oil. In a bowl mash the banana with the egg, then stir in the oats.
  2. Pour into heated pan, and allow to cook until that first side sets ~ about 4 minutes. You want to make sure your first side is pretty set or else when you flip it the pancake will break. Flip and cook on second side for 2-3 minutes.
  3. Top it!
