Watermelon Popsicles

Watermelon popsicles are a summer staple around here.

Nothing screams summer like popsicles and watermelon. Put them together, and you have pure genius!

My family can easily go through one large (think mammoth, huge, state fair prize winning sized) watermelon each day during the summer. On those rare occasions that we actually have some melon left over, I have gotten into the habit of making it into popsicles. But these aren’t just ANY old popsicles. On a 102 degree day with 90 percent humidity, these are MAGIC, LIFE SAVING popsicles! They are cold, refreshing, delicious, temper-tantrum taming magic on a stick!

(Oh, and they are healthy too. But when it’s 102 degrees out, who really cares?!)

Oh Sweet Summer, You Make Me Sweat!

But no fear! For these Watermelon Popsicles are so easy to make, you’ll barely break a sweat! Well, unless it’s 102 degrees out, in which case you may a little…

If you have a juicer, just run the melon through and pour into popsicle molds. I usually don’t even bother taking the seeds out, and sometimes include a little bit of the rind for added nutrient value. If you DON’T have a juicer, simply blend it in the blender and then pour through a mesh sieve. You may need to use the back of a spoon to press the pulp and get the last of the juice out.

Juice to Popsicles

I have a few juicers, some nicer than others, but I have found I prefer the easiest to use, basic widemouthed models for watermelon. You can easily pick one up like this affordable juicer for $40-$60. There are lots of cute popsicle molds available, and if you are trying to avoid plastics, there even some awesome stainless steel ones. I really like these ones. Of course, in a pinch you can always use a dixie cup and craft stick, or plastic spoon!

Popsicle Storage Tip

If you want to always have these magic Watermelon Popsicles on hand (you know, for serious emergencies) but only have a few popsicle molds, you can make extra and store them in the freezer by taking them out of the mold and layering them between wax paper in an airtight container in the freezer. (I owe this brilliant tip to my friend, Kristin. I don’t know why I never thought of this on my own!)

Watermelon Popsicles Recipe

Ingredients
  • 1 whole watermelon, or as much as you’d like!
  • Optional add ins like mint

 

Basic Instructions

  1. Put watermelon through juicer. Or, blend and strain through mesh strainer
  2. Put in molds

Step by Step Instructions

Step 1

Cut the watermelon. It’s ok to leave some seeds and even some of the white part of the rind.

Step 2

Run the watermelon through a juicer. If you don’t have a juicer, move on to step 3!

Step 3

If you don’t have a juicer, you can use a mesh sieve and a blender to make the watermelon popsicles. Blend the watermelon well, then pour through the sieve into a bowl. Prop the sieve over the bowl for a couple of minutes to let all of the yummy juice run out!

Step 4

Pour the juice into popsicle molds. You can choose to add some fresh mint leaves or berries if you like. Stick in the freezer and let freeze until solid.
