If there’s one thing I know, it’s that Peanut Butter and Chocolate are a match made in heaven.

It’s one of those combos that EVERYONE loves! It’s almost like a primal instinct to combine those two items.

When a peanut butter and chocolate craving hits, you need something FAST and EASY!

These no-bake cookies are the fast, easy and HEALTHY solution to that primal need!

WHAT YOU’LL NEED FOR THESE NO-BAKE COOKIES

No sense wasting time, let’s get straight to the point. Here is what you’ll need to make these mouth watering morsels…

Peanut butter. I mean, obviously, right? But don’t get the cheap stuff. It’s just not worth it. Get the GOOD stuff, like this.

Chocolate. Since this is naturally THE MOST IMPORTANT INGREDIENT in the whole recipe, don’t mess this up. This is my preferred chocolate for this recipe.

Rolled oats. We stick to gluten free oats around here.

Honey. I always use raw and local honey when I can. But if I don’t have local on hand, then I’ll usually use this kind.

You’ll also need sea salt, vanilla and cinnamon.

WORLD’S BEST (and healthiest) NO BAKE COOKIE

Be sure to make an extra batch  of these AMAZING healthy no bake cookies to keep in your fridge for emergencies, and don’t forget to make another batch for the kids, cause you won’t want to share!

But seriously, these really are a great, homemade and wholesome treat to keep on hand for both yourself and the kids. Super easy to prep and clean up, and no need to heat up the oven on those hot summer days.

My kids love to help me make these, and I let them make their own cookies. So it becomes a nice activity to do together, to boot!

HEALTHY NO BAKE COOKIE RECIPE

makes 12 cookies (serving size is 1-2 cookies)
Ingredients:
3/4 cup gluten free rolled oats. Organic if desired.

1/4 tsp ground cinnamon
pinch of sea salt (not necessary if you’re using salted peanut butter)
1/3 cup mini dark chocolate chips
1 cup all natural peanut butter. Organic if desired.

Tbsp raw honey, or maple syrup
1 tsp vanilla extract.

  • In a mixing bowl, combine the first 4 ingredients.
  • Then, add in the peanut butter, honey, and vanilla  and stir well. It will form a sticky dough. If it’s too runny, add a few extra tablespoons of the rolled oats, until you get a good consistency.
  • Using a tablespoon, take a scoop of the dough and roll it in your hands to form a ball, then carefully press it to flatten, making a cookie shape.
  • Repeat with remaining dough.

These cookies will keep well in the refrigerator in an airtight container for about a week…if you can resist them for that long!
